Five Faves Friday (Vol. 16)

- ONE - 
Winter Weather - Winter has finally arrived in Texas. And, it's bringing the serious with it. We have temps in 30's and it might even show a little snow this weekend. I know. Say whaaaatt?!

- TWO - 
Farm to Table Blogger's Dinner - I am so excited that this weekend has finally come. I will be joining several other Texas Women Blogger's for a feast this Saturday. We will be attending a special farm-to-table dinner hosted by Urban Acres Farms. I am so excited to check them out as well as meet some fabulous Texas Ladies, who happen to be bloggers too! It's sure to be a fabulous time!

Now, onto what I am going to wear... 

- THREE - 
New Lip Color - I am loving my new Fall lip color from Mary Kay. It's called Apple Berry and it's all sorts of perfect for Fall and Winter. This picture is particularly creepy, but I had to share. PS - Please do not drive and take selfies. I at least waited until I was stopped at a red light. Safety first, people. 



- FOUR - 
Newest Food Blogger @ TWB - I have been given the honor to help host a "Foodie Friday" edition on Texas Women Blogger's, once a month. I am so excited to expand to other bloggers and readers and can't wait to share some special food creations. Stay tuned, as I will let you know when my first Foodie Friday post is up!

- FIVE - 
#WineWedensday Wine Glass Swap - Yay! The wine glass swap is officially underway. Registration closed on Wednesday and we have some great people signed up! I'm working on getting everyone together with their partners and should have those out no later than tomorrow. This is going to be such a fun swap and I can't wait to see everyone's goodies. Yay! for new wine glasses and new friends. Cheers!! {If you still want to sign up send an email to arhicks0427@gmail.com. Five Faves Friday (vol. 15)

How great is it that Halloween falls on a FRIDAY this year?!

And, since it's Friday, you know what that means... 
My Five Faves from the Week!

-ONE-
Candy Corn M'n'M's - Holy smokes! How did I not know about these before?? I love anything candy-corn, especially around this time of year. My wonderful #FallFunSwap partner, Colleen, sent me an amazing Fall package and these were in there! I was totally intrigued, ripped open the bag and nearly shoved every single one of these perfectly little round bits of goodness in my mouth. Then I went to the store and bought 10 more... I'll admit it, I may have a teeny tiny addiction. I don't how I am going to make it a whole year without these.

Glittered Pumpkins - I am totally loving my little glittered pumpkins!! I especially love that I can use them all the way through to Thanksgiving. For a simple tutorial to make your own glitter pumpkins, click here. 


-THREE-
Sweater Weather - It's here! It's here! Winter weather is upon us. Tomorrow's high is in the low 50's and I'll take it. I'm so excited to bring out the sweaters, scarfs, and warm fuzzy beanies. Obviously I am prepared. Now that I think about it, I guess I have been for a couple of months - That Texas Weather is a tricky one.  Bring on the cold! 


-FOUR-
Jalapeno Pimento Cheese + Bacon Sandwich - So this happened this week. I have no words... since I've got a mouthful of this yummy delicious sandwich. Recipe coming to the blog next week. Stay tuned. 

-FIVE-
Swaps - I have participated in a few swaps and I am finally hosting my very OWN swap!! Eeek! Five Faves Friday - Galveston Edition


Hey, hey hey!! This post is coming to you straight from the incredible Blog Elevated 2014 Conference in Galveston, Texas. My TSMRI team and I loaded up the car with our overly stuffed luggage and we hit the road yesterday ready to make our way to the Gulf Coast. Man! Oh, man!! Since we stepped foot into the salty air we have been  been simply swept away with wonderful information, awe inspiring talks, and the best dang networking I have ever experienced.

So since I'm here, why not bring this week's edition of #FiveFavesFriday, Galveston Style?!

I'm so excited so, Let's go!
-ONE-
Imperial Sugar - Two words: Sugar Scrubs. The amazing women from Imperial Sugar are not only awesome bloggers themselves but they showed us not one. Not two. But three. THREE! different and simple sugar scrubs. The scrubs smelled amazing, all natural and truly beneficial for your beauty regime. Not to mention they are completely customizable. I can't wait to share these with you (tutorials are coming soon) or if you're following me on Instagram you've had a little sneak into the wonderful world of these sweet scrubs.

-TWO-
Sweet Swag - Speaking of "sweet", can we just take a minute to recognize the amazing swag?! It just keeps coming and coming...  and, there's still more to come. Hats off to some of the amazing sponsors, like Kroger, Proctor and Gamble, and Galveston Visitors Bureau. Check out this adorable journal included in our welcome bags.



-THREE-
Shrimp Fest - So apparently I have the best luck of perfect timing. Right now, the Galveston Island Shrimp Festival. Which we will be headed to this afternoon to pick up some shrimps and gorgeous views of the ocean. I not only love food, but I love fresh seafood. This was made for me!

-FOUR-
The Incredible Bloggers - Can we take a moment of appreciation (and a round of applause) for the incredible bloggers that are upon us? Seriously, I have met some incredible men and women who are like minded, driven, and beyond inspiring. For example, I met Rachel Mathews from A Southern Fairytale today and I can't get enough of her and her blog. I felt as if I was meeting a celebrity when we shook hands. She's a photographer, mother, and an amazing cook. A native Texan (shoutout!) and one of the sweetest women I've ever met. Please go check out her blog, she truly is one talented lady. 

-FIVE-
Social Media - Where in the heck would we be without social media?! I mean seriously! I know I wouldn't have this opportunity without social media and the research team I am a part of. But what is so cool is that it's been so much fun searching, browsing, and  connecting with so many amazing people and companies. I just love it!

Okay, so that's all for now. I will be posting a detailed post about my experience and what I've learned from the conference next week. But, for now, I've gotta run. I have lots more hands to shake, people to speak to, information to learn and  more fun to be had.

Five Faves Friday - Autumn's in the Air


-ONE-
Autumn Bucket List - My social media feeds have been blowing up with photos and ideas for fun Autumn to-do's. I couldn't resist making our own. I've jotted down a few things we'd like to do this Fall and plan to add a few more. I am super excited about Fall this year, and all the fun festivities it brings with it. Do you make a seasonal to-do list? I can't wait to see how many we can knock out this season.

-TWO-
Cooler Temps - Cooler temps in my part of the South means temperatures in the high 80's and I will take it! Last night was bliss while we walked our property out to the lake. It was amazing and I can't wait for temps to continue to fall. I'll be eating those words as soon as we get an ice storm, but for now the weather is perfect! And, yes, Texas has ice, not snow, but ice... ahhh the irony.

-THREE-
#FallFunSwap - So as if my new blogging friend, Lindsay, over at The Pursuit of Pink, could get any better. She teamed up with Colleen Samantha to host a #FallFunSwap. I love Fall and I had to jump at the opportunity to participate. I can't wait to fill up a package full of some of my Fall favorites. If you'd like to join too, there is still time to sign up. -FOUR-
Comfort Food - You know us Southerners love out Comfort Food. So after being on the road and feeling like death for the past week I could not wait to get back into the kitchen. First dish on the menu? Pot Roast with Fresh Carrots, Mashed Potatoes, Broccoli-Cheese Casserole, and lots of Gravy. Praise the Lord for Gravy!

Specialty Cocktails - A few weeks ago I met my brother for cocktails and a quick catch-up sesh in our home town. My in-laws had mentioned a new spot, Simmer, and I couldn't wait to check it out. The bartender, Dillon, was amazing and made me the perfect "end of summer" cocktail. In fact, the name of it is: "Summer's End". Made with Gin, Fennel Syrup and fresh cucumbers. It's one of his original creations and not listed on the menu (making it that much better). It was out of this world! Especially since temperatures that day were 100+ degrees. It was the perfect combination. Refreshing and Delicious. The ice bar made a nice addition too.

Five Faves Friday



ONE

My First Mug Swap - I joined Kallie from But First, Coffee for my first ever Mug Swap. It's similar to pens pals like when we were kids except you virtually meet another partner and begin knowing each other (via several emails). Then, once you get to know each other a little better you send your partner a coffee mug and visa versa. How cool is that?! A new friend and a coffee mug is included.

Isn't she a doll?! Kallie also shares fabulous makeup tips on her blog.
TWO

My Mug Swap Partner - So the mug swap gets even "cooler" when your partner happens to be one of your favorite bloggers. I have the pleasure of being partnered up with Lindsay from Pursuit of Pink. She is completely rad, and we have TONS in common. I have loved getting to know Lindsay more, even though I frequent her blog quite often. It's really been fun getting to know each other on a more personal level. My hope is to continue our Blogging Friendship even after the swap. As a new mommy, Lindsay shares lots of baby tips and her favorite Mommy products, as well as other fun things like make-up, life stories, and the transition of moving outside the city limits. Check her out, you'll instantly love her!


THREE

Back-to-School - I know all my mommy friends out there can attest to this, but I am so ready for school to start next week. After meeting some of my students I'll be teaching this semester and gearing up for classes myself, I am super stoked to get back into the swing of things and get this school year off to an excellent start.


Farm Kings - Finally!! My favorite TV show, Farm Kings, is back for another season. I just love love love everything about the Kings. It inspires me so much and I hope to one day grow up in be a farmer. (seriously!) I know it sounds crazy but I love that they can spend their work day out in the fields with their produce, flowers, and animals. It seems like the perfect job to me. A lot of hard work, but still so rewarding. I would just love to spend a week on their farm with them... until then, I'll get my weekly fix by watching the show.

FIVE

One And Only - I am completely hooked on Emily Griffin's newest book, One and Only. She released it earlier this Summer and I've finally had the chance to dive in and start reading it. It's been so hard to put down. I love the story of Shea's love for football and her Alma matter. I especially love that the plot in based in Texas and centered around the profession of working in a college setting and writing. See the similarities?! If you haven't read it, it's definitely a must read.

Five Faves Friday: a quick lunch idea, DIY, & cute cattle



Today I'm linking up with Amanda, Erika, and Lauren. 

ONE
Number One goes out to my Number ONE! I am proud and excited as heck to be celebrating my husbands accomplishments as we attend his Master's Hooding Ceremony this weekend. He has completed his Master's in Counseling and Psychology and I cannot be more ecstatic. So here's to you B! Congratulations! I'm honored to be married to such a smart and educated man. 


TWO

Number Three: Quick lunch idea - Turkey Bacon Spinach Wrap. Use a whole wheat wrap, smear with some Garden Vegetable cream cheese. Add a couple pieces of thinly sliced turkey, cheese, spinach and a piece of bacon (or two). Roll up. Cut in Half & VOLIA! So quick, delicious, and packed with protein.

FOUR
Four is all about the DIY projects that brighten your day. For instance, this fun little coaster made by yours truly. I love simple DIY projects that only take a minimal amount of time yet can totally brighten your day and add a little more joy to your life. I just love the pattern on these... which is only scrapbook paper! Using a tile (found at most hardware stores), scrapbook or decorative paper, modge-podge, and some clear adhesive spray and you've got yourself a customized coaster. Be on the look out for some more simple DIY tutorials coming soon to a blog near you :)

And, lastly I am going to leave you with this completely adorable and equally hilarious video. Number Five goes out to this video of a cattle farmer calling his cows to the tune of Lorde's Royals. Speed-up the video a couple of minutes to really see the herd moving in, and be sure not to miss the the ending. You'll just be overcome with laughter and utter cuteness!(see what I did there?)

Five Faves Friday: Research, Mascara, and New Blog Smell


Let's just dive right in, shall we?

1. Oven Repair Men: Confession. My oven, stove-top, my entire range has been out of business for the past 3 weeks. Do you know what that does to a food blogger??! It's been madness I tell ya, and lots and lots of trips to Taco Bell. So, (FINALLY) my stove got fixed this week and I am very thankful for my oven repair man that took a whole 10 minutes to get my cooking apparatus heating up and running again... ahhh, much better. Now I can go back to cooking and creating culinary masterpieces! Whoo Hoo!

2. Cover Girls's new 2 in 1 mascara, Bombshell Curvaceous Mascara: my typical mascara routine usually includes two different products to get fuller thicker lashes. But, now Cover Girl has that covered (pun intended). This simple two step mascara helps me achieve volumized lashes - and I LOVE it. BTW, I hate these types of pictures. They always look so creepy - I apologize. But don't my lashes look fabulous?!

4. Birthdays: It's my Boo Things dirty 30 this weekend and I am so pumped to celebrate my wonderful man. Happy Birthday to my B!! I can't wait to celebrate the next 30 with you.

Five Faves Friday



Whoo Hooo!! Can you smell that?! It’s the smell of the glorious WEEKEND upon us!

I hope you guys and gals are kicking the weekend off with a kick-ass start and enjoying your Friday!

I have this week’s Five Faves are ya ready?!

Leggo. (trans: let’s go)

1. Man-Pleasin’ Meals: Gotta love a dinner that takes all of 10 minutes to prep and cook an then your man chows down like it’s the best thing he’s ever ate! Take for example this quick Philly Cheese Steak knock off, complete with leftover onion & poppy-seed hot dog buns. Anytime you can please your man, under 10 minutes, AND get rid of the extra hot-dog buns is a great day. Especially great if it’s a Monday. Starting off the week right. With meat, cheese, bread, and au jus!


2. Pioneer Women’s Lasagna: Whatever you’re doing this weekend, please PLEASE make sure that this Lasagna is incorporated somewhere in those plans. It’s the best stuff! And who the hell doesn't love lasagna?! This recipe is the bees knees.


3. Crazy Fun Straws: These little babies will mesmerize you and keep you giddy while sipping on your favorite drink. Probably not the most functional thing to drink from, but what the hell?! YOLO!


4. Pretty China: Funny story - B and I have had this China since before we were married.. Pathetic story -  I just now took it all out of the box and hand-washed the pretties THIS WEEK!
I now feel so refined and as if I have my life together when I sip my morning coffee out of these beauties. Aren't they just lovely? Even upside down.


5. Amazing Neighbors: It’s pretty obvious that we all wish to have the BEST neighbors, but guess what.. I really do! Not only did my neighbor to the right provide B and I with a haul of veggies this week (onions, cucumbers, squash, and jalapenos) but the neighbor to the right got me some Hyacinth Bean Vine seeds after we discussed all things Horticulture over dinner one night.. The bean vine was a hot topic that night, and then a week later he gave me a pack of the seeds he ordered (it’s not a condom people, it SEEDS! I know what you were thinking #psychmajor, remember?).
So sweet, and let’s face it, these are my favorite types of gifts - gifts from or for the garden.

Like I previously mentioned in my post last week here, I am was  going to share with you FIVE of my favorite things from each week to week.

Weellllllllllllll, {as I'm sure you're aware} I've been a little out of the blog world for a minute. To say that the hustle and bustle, and the overall craziness of life has gotten the best of my free time, would be a HUGE understatement.
But I'll spare you all the deets. 
(Like how my beloved doggie lost an eyeball over spring break, or that we BOUGHT A HOUSE, or that I am in wayyy over my head with Grad School and a million other things - I am sure you can relate)

So I am picking up where I left off, and decided to pick back up with my weekly top-picks, and I'm not looking back.

1. Checkout51 app. - If you’re anything like me, you understand the feeling of running to the grocery store countless times on the fly during the week. Even if you can't relate, this App is for YOU! This App. is for everyone! Bye, bye to the days of coupon clipping. Or remembering to bring those pesky little sheets of paper with you to the grocery store. Oh, and, hello, clutter town. Ugh, I just hate, yet love coupons. I always wonder if it is really saving me any money to actually clip the darn things and then try to remember A: that you have a coupon for an item, or B: to bring your coupons with you to the store. Now, with Checkout51 you can literally EARN money as your grocery shop. Here’s how it works:
1. Browse through the weekly offers on the app
2. Purchase the products at ANY grocery store
3. Upload your receipt in the app, and claim your offers!



Easy, peasy. Once you earn $20.00 in your account Checkout51 will send you a check for the amount. Yeah, it's pretty awesome! Available on Apple and Android devices, and can be found in your app store.



2. 14 Hands Chardonnay - wow, I think it took me to write this blog post to realize that Chardonnay is spelled with 2 “N”s (World’s worst speller right here, ask my best friend). Anyway, I LOVE this Chardonnay wine from 14 Hands! It’s amazing how quickly one bottle of 14 Hands can disappear. Especially while you’re doing things like: chatting it up with your hubby on your blow-up mattress, in the middle of the living room, because you have yet to go pick out any furniture. OR during a Blogger Happy Hour (see below). OR while you’re chatting it up on the phone with your Momma for hours one evening. Then Poof it’s gone! Just like that! It really is that good!. So, do yourself a favor and go pick up a bottle (or 2, or 3) at your nearest Walmart… Yes, I DO buy my wine at Walmart. And, YES, you can buy your wine at Walmart too. And, pretty dang good wine at that! Plus, I wouldn't want to get too fancy on ya, and it’s reasonably priced.



3. The Crockpot - What a glorious device! With moving, being in between two residences (yes- we just bought our first home!! Whoo Hooo!), and the crazy schedule that is the end of the semester for teaching and Grad School, I have never needed, or loved, my crock-pot more than right now. And, let's face it, there are only so many times during the week that you can eat Subway or Taco Bell for lunch and dinner. A home cooked meal always hits the spot, especially if you've been having to grab meals on the go. So here’s the deal, I love to put stews, roasts, and other hearty meals in the Crockpot. You can prepare the dish in the Crockpot in the morning, then set the temp and let the Crockpot do all the work for you. Then, when you come home from a long and exhausting day you already have a delicious meal waiting, and typically your house smells pretty amazing too.

4. Blogger Happy Hours - So, I know lately it seems like I am obsessed with Erin, over at Living In Yellow (well, I guess I'm kinda am a little obsessed). Anyway, she is fabulous and you should definitely go check her blog out. Now back to the Happy Hour part. Erin (being the genius blogger that she is) put together this completely awesome idea called a “Blogger Happy Hour” (BHH). Once or twice a month she and another blogger host a Google+ Hangout with other like minded bloggers, including newbies (like myself) to chat all things Blog related. When you attend BBH you bring your questions, your favorite drink (for example, a bottle of 14 Hands Chardonnay, like yours truly), and pull up a chair. To your computer screen, that is. This month, Erin teamed up with the Hilarious, Taylor from The Daily Tay. BTW, Taylor has the most adorable dog, named Harlow. Which he joined in on our BHH, and all the girls swooned over him. Plus, those of us that join in were able to have Taylor and Erin's undivided attention for an hour or so. This past Tuesday I joined in on my first BHH with Erin and Taylor, along side some other awesome bloggers! It was so FUN, COOL, AWESOME, & totes AMAZING! Erin is hosting another BBH this month, you can check out all the deets here.

5. Soft Cheese Tacos - WARNING: the following picture may not look appetizing. AT. ALL. But I don't care. These smothered, cheesy, Soft Cheese Tacos are the BOMB.com. I swear I think I could eat these every. single. day. Breakfast, lunch, AND dinner. When we began our move, the first night we stayed at our new house we decided to go out to eat to grab some dinner. We stopped in at a little Mexican food restaurant right off of the lake. One of many in the area, I might add. It looked very promising due to the fact the entire parking lot was full. So, we decided what the heck !? Gave it a shot. And, thank goodness! That evening I was introduced to my newest food love. This is the food you dream about and crave every single day. Seriously, I crave these on a daily basis. Thank goodness I don't eat them on a daily basis, but heck, I probably could! For reals. Every time we come up to the new house, our first stop is to get a whole platter full of soft cheese tacos. The rice and beans are a nice touch too. The restaurant also has this amazing dip they call “Crema”. Which is basically a mix of guacamole and sour cream - perfect to pair with their amazing tortilla chips and salsa. Next time you visit us at the new casa, I will be sure to take you to get a platter of soft cheese tacos. I don't know what more can I say - they’re simply AMAZE!

{lighter} Chicken Tetrazzini


Chicken Tetrazzini is one of those great dishes that are so versatile yet so satisfying.
If you're serving up Chicken Tetrazzini you  really can't go wrong. 

I came across this lightened-up version of the recipe in my Comfort Foods Makeovers cookbook by America's Test Kitchen. 
(This is one cookbook I really cherish and  love oh so much!! I know you will too and can purchase the cookbook here).

One thing that I really love about this dish is that you can make this casserole ahead of time,  store it in the fridge until you're ready to eat, and then just simply pop in the oven - making it a quick, no-fuss week night meal. 

This dish is also packed with satisfying and healthy ingredients, like lean chicken breast, mushrooms, and peas.

This particular (lightened-up) version calls for a cup of frozen peas, and I must admit  I was very a little skeptical at first.
However, and much to my surprise, the peas give this dish such a great texture with the added benefit of vegetables. 
Needless to say, I am a skeptic no longer! 
And, let's also just say, I'll never make Chicken Tetrazzini with out them!

With the addition of the frozen peas, it also made me ponder what other veggies I could add.
Carrots?  Celery? Finely chopped Bell-Peppers? Maybe even some broccoli?!!
Yes, I'll definitely be giving the broccoli idea a try one of these days.

Anyway, broccoli, peas, and peppers aside, this dish is definitely a keeper!
{lighter} Chicken Tetrazzini is a husband-friendly (and I assume kid-friendly) dish that the whole family will be sure to love. 

If you've never had Chicken Tetrazzini before, you must give it a try! 
I promise you won't be dissatisfied.

{lighter} Chicken Tetrazzini

(the order of events)


Begin by trimming the fat from your chicken and cut your chicken breasts into 1/4 inch pieces. 
Add your chicken pieces to a bowl.



Marinate chicken with soy sauce, garlic salt and pepper. Cover with plastic wrap, and refrigerate for 30 minutes to 1 hour.
(BTW, I found out this process makes your chicken super flavorful and extra tender)

Meanwhile, begin cooking your egg noodles. Cook until al dente.

Melt one tablespoon of butter in a 12-inch skillet over med-high heat. 
Add your mushrooms and onions, as well as some garlic salt and pepper (to taste).
Cook until golden brown. 
Next, add your flour and continue to cook for about 2 minutes, or until golden. 
Next, whisk in the broth and sherry and bring to a simmer. 
Add cream cheese and 6 tablespoons Parmesan cheese. 
Simmer until slightly thickened. 
Next, grab your marinated chicken and a cup of frozen peas and add them to your skillet.
Simmer for a couple of minutes. (note: the chicken is not fully cooked)
Next, add the al dente noodles to a large bowl and pour in the chicken & peas mixture. 
Toss together, or stir to combine.


Once everything is nice and combined add it to a square baking dish. 
Top with breadcrumbs, remaining parm. cheese, salt and pepper to taste. 
(I also like to add a few dashes of paprika for extra flavor. 
Pop it in the oven at 400 degrees, for about 12 to 14 minutes, or until hot all the way through.
Let cool for a few minutes before serving. 



You can also use cooked turkey, making this a must have for Thanksgiving left overs.

Ingredients:



  • 12 ounces boneless, skinless chicken breast (cut into 1/4- inch pieces)
  • 2 tablespoons soy sauce (use low-sodium for a lighter option)
  • ounce bag medium egg noodles
  • 1 tablespoon butter
  • 8 ounces sliced mushrooms
  • 1 white onion, chopped fine
  • 2 tablespoons all-purpose flour
  • 1 cup low-sodium chicken broth
  • 2 tablespoons sherry
  • 3 ounces neufchatel cream-cheese, softened
  • 1/2 cup grated Parmesan cheese
  • 1 cup frozen peas
  • 1/2 cup panko bread crumbs
  • garlic salt & pepper (to taste)
  • a few dashes of paprika (optional)


  • Directions:



    • Heat oven to 400 degrees
    • Combine chicken pieces soy sauce, garlic salt and pepper in a bowl - Cover and refrigerate for 30 minutes to 1 hour.
    • Cook egg noodles, just al dente, according to package directions (reserve 1 cup of cooking water)
    • While pasta is cooking, melt butter in a 12-inch skillet over medium-high heat
    • Add mushrooms, onions, 1/2 tsp. garlic salt, 1/2 tsp. pepper and cook until browned (about 6-8 minutes)
    • Stir in flour and cook an additional 2 minutes, or until golden brown
    • Next, whisk in broth, sherry, and reserved cooking water, scrapping up any brown bits, and bring to a simmer.
    • Whisk in cream cheese and 6 tablespoons Parmesan cheese and simmer about 1 minute, until slightly thickened
    • Stir in marinated chicken and peas, simmer gently for about 1 minute (note: chicken will not be fully cooked)
    • Add chicken mixture to cooked pasta in a large bowl, and toss to combine
    • Transfer chicken and pasta mixture to square baking dish
    • Top with panko and remaining Parmesan cheese, salt, pepper, and a few dashes of paprika (optional) to taste
    • Bake about 12 - 14 minutes until hot throughout
    • Let cool slightly before serving
